Munira's Devil Food Cupcakes

I must really thank Munira for her wonderful recipe. And she was really kind to guide me on how to make the hot coffee portion. Thanks alot! i hope one day you see my blog and knows that i am thanking you. =)




Ingredients:

2 cups/240g cake flour
1 teaspoon baking powder
2 teaspoons baking soda
¾ cup/90g cocoa powder
1 tsp salt
2 cups sugar/400g ( reduced to 300g)
1 cup/240ml hot coffee (1 teaspoon coffee granules eg nescafe + 240ml of hot water)
1 cup/240ml canola oil
1 cup buttermilk/240ml (I use vinegar 1 tbsp + full cream milk)
2 eggs
1 teaspoon vanilla

Method:
Preheat oven to 165°
In a large bowl whisk together dry ingredients.
Add coffee, oil and buttermilk and mix until combined.
Add eggs and vanilla and mix for another 2 minutes.
Pour batter into two greased and floured 9-inch round baking pans.
Bake for 30 minutes.
Let cool in pans until warm and then remove from pans and allow to cool completely on a cooling rack.

My MIL told me that she has some over riped banana and asked me if i want to do some baking. So i did, i came across BakingTaiTai's receipe and i tried.




Here you go, it was really moist. =)

Pork Floss Bun

After good feedback on my hotdog buns, i decided to try pork floss bun. 
As usual, i used this recipe for the buns. Using my Bread Machine to knead the dough. This round i double up the dough size, in order to make more buns. =)

Proofing in 50 deg C oven for 40mins. As this was my first time making so much buns, i was a little worried that all the buns will not proof evenly, so i proofed for 50mins but i switched the tray (hence the extra 5mins)

tada~ final product. same comments: nice, just add more mayo and pork floss.. hahah

4 Colours Rainbow Cake

Happy birthday to my favourite cousin, Kerine who will be turning 13 on 26 May 2016. I have decided to bake rainbow sponge cake after seeing bakingtaitai's rainbow cake. 
Here's here recipe.

Instead of following her 6 colours, i did 4 only. 


Need to work on my frosting >.<

 




Thank goodness, it was well received!

After they cut the cake, a picture was sent to me.. then i realised the coloured was stacked wrongly.. haha!

Hot Dog Buns

It was my first time trying to make hotdog buns. Need to work on the shaping of dough.
For the bread, i used this recipe. After the kneading and proofing of dough, i divided it into 5 portions. After wrapping the hotdog, proof again for 40mins. (see first picture and second picture, before and after proofing).


I should have divided it into more portion and make the bread thinner.

Happy Mother's Day - Red Milk Tea Chiffon with Vanilla Chiffon





I was quite tired from work on saturday morning, hence only red rose =p
I used red milk tea instead of earl grey.
