Butter Cake


Had to clear a few blocks of my Lurpak (slightly salted).

170 Deg C - 45mins
150 Deg C - 20mins
140 Deg C - 10mins
 Thankfully the taste did not compromise. 

Recipe by Mrs Ng SK, found in Domestic Goddess Wannabe

Ingredients
  1. 230g Salted Butter, room temperature
  2. 4 egg yolks
  3. 150g caster sugar
  4. 200g self-raising flour, sifted
  5. 60ml fresh milk
  6. 1 teaspoon vanilla extract
  7. 4 egg whites
  8. 50g caster sugar
Instructions
  1. In the bowl of a mixer, cream the butter and sugar (150g) until it turns light and fluffy. Scrape the sides of the bowl occasionally. Be patient and let the machine do its work!
  2. Add the egg yolks, one a time and beat it in before adding the next.
  3. Beat in the vanilla extract. Fold in half the flour.
  4. Add the milk and mix. Add the remaining flour and fold until just incorporated.
  5. Scrape the bowl and give the batter one final mix. Set this aside.
  6. In a clean mixing bowl, whisk the egg whites until it turns foamy. Slowly and gradually, add the sugar (50g), whisking all the while. Whisk this until stiff peaks form.
  7. Transfer 1/3 of the egg whites into the egg yolk batter. Beat this in.
  8. Gently fold the remaining egg whites in 2 batches until all the egg whites have been incorporated.
  9. Pour this into a lined and greased 8×8-inch baking pan.
  10. Bake at 170°C for 45 minutes.
  11. When the cake is done (insert a skewer it the cake and if it emerges cleanly it is done), let the cake rest for 5 minutes in the pan before carefully transferring onto a wire rack to cool completely.
  12. Cut into slices and enjoy!!
Notes
  1. As I noticed that the top of the cake was getting quite brown, I reduced the heat to 150°C at the final 20 minutes, then to 140°C at the final 5 minutes. You need to keep an eye on the cake and to know how your oven behaves so you can make the necessary adjustments.

Golden Churn Butter Cake


Using 2 aluminium trays to bake Golden Churn Butter Cake.
Recipe by Mrs Ng SK found in Diana Gale's blog.

for my oven, i baked 170 deg C for 45mins, 150 deg C for 20mins and 140 deg C for 10mins.
The cake was perfect and with a bit of crispy top layer. =)

My girl has been bugging me to bake rainbow chiffon cake. I told her i need to spend time coaching her on piano, didi on writing and preparing dinner... Maybe weekend then can squeeze out time, but no promise. Hence, i made butter cake.. since it's quite hassle free. hehe..

Butter Cake

After servicing the oven, this was the first time i bake. Mrs Ng's famous fluffy butter cake. I was super worried that i couldn't bake any cake for my late dad's birthday (21 Jan). 
I'm in love with the embossed square on top.. hehehe and this round the cake is very squarish. This is what i have been trying to bake.

on side note, Mrstanthebakingmama will start to take orders for cakes. However, due to the nature of chiffons (which i steam bake), i have to take less order like before. this is to prevent my oven from "falling sick again" I really appreciate you guys for your kind order all these while.

Christmas Bakes

A simple dessert bakes for Tan Residence's 2016 Christmas Party.

Adapted from Zoe's Best Brownie.

The legendary Mrs Ng SK Butter Cake.
Second try with my gold anodised 8" x 8" square pan with removable base. Not very happy with the result, still a layer at the bottom that looks more damp. Taste wise is ok.. Will try again.

Read up on different kinds of cheesecakes.
And hurray, after so many thousands bakes i finally got a smooth un-cracked top. 
Different oven act differently i must say. Like for my Mayer Oven, the above JCC i have to put at the bottomest rack means directly on the base to bake. After the 18 mins of 200 deg C, 12 mins of 160 deg C, 20mins in enclosed oven, 20mins with door of oven opened slightly to get the crackless JCC. Well, this way works for my oven. i tried following Dr Leslie's method exactly but somehow all 4 of the JCC CRACKS horribly. thank goodness JCC needs to "age" in fridge to taste better and while aging in the fridge, it shrank and "close" up the cracks.. LOL.. my cheat way..

Butter Cake (Mrs Ng SK)

The last time i baked a Butter Cake was in May.
Today i bake again using SCS Salted Butter, it still taste good =)






Butter Cake (Mrs Ng Sk)
Serves 8

Ingredients
230g Salted Butter, room temperature
4 egg yolks
150g caster sugar
200g self-raising flour, sifted
60ml fresh milk
1 teaspoon vanilla extract
4 egg whites
50g caster sugar

Instructions
In the bowl of a mixer, cream the butter and sugar (150g) until it turns light and fluffy. Scrape the sides of the bowl occasionally. Be patient and let the machine do its work!

Add the egg yolks, one a time and beat it in before adding the next.

Beat in the vanilla extract. Fold in half the flour.

Add the milk and mix. Add the remaining flour and fold until just incorporated.

In a clean mixing bowl, whisk the egg whites until it turns foamy. Slowly and gradually, add the sugar (50g), whisking all the while. Whisk this until stiff peaks form.
