Pandan Chiffon Cake

9" / 23cm Pandan Chiffon Cake using 6 whites and 5 yolks. Testing to see if it can be as soft or not.

it is indeed very soft, but i din bake long enough hence there is a dense layer at the bottom. not my ideal kind of chiffon though.

Blossom Chiffon

This is my fourth time making the Blossom Chiffon Cake. 
First attempt for my MIL
Second attempt from a customer
Third attempt for Emily's daughter, Faith, and since i decided to name it Blossom.

Sorry bad lighting.


Day 2: baking of the chiffon sheets. There are Pandan, Vanilla, Strawberry flavours for different colours.

Day 3: forming the flowers

Day 1, had to bake the base first. The above base is made from Valrhona Cocoa Powder, 17cm tube pan.

Pandan Bread Loaf

Recipe from MyMindPatch, but i changed a little.

Ingredients
*1/4 tsp Pandan Paste + 1 tsp Pandan Essence
100g fresh milk 
40g coconut cream 
20g condensed milk 
20g coconut/vegetable oil 

25g beaten egg 
35g raw sugar 
1/4 tsp salt 

225g bread flour 
25g wholemeal flour 
1/2 tsp instant dry yeast

as the rice was cooking, it smell damn good!

Blossom (Happy Birthday to Faith)

Hubby and I decided to name this cake Blossom
(psst, the mushroom belongs to Little House of Dreams)

Very happy to bake for a close friend's daughter, Faith, for her first birthday.
There's hidden surprise in the middle =) 
Flora marshmallow to coincide with the theme.

Blossom

17cm Valrhona Chocolate Base
White: Vanilla
Pink and Dark Pink: Strawberry
Green: Pandan 

The uniqueness of this cake is soft, moist, no added colour gel (each colour based on each flavour). The best thing is, whole cake is made of chiffon and it's healthier choice! 


A very close friend of mine ordered this Blossom Chiffon Cake from me. Previously she requested something pinkish / rainbow for her birthday last month. So i made a Pink Ombre with Rainbow Chiffon.

18cm Pandan Chiffon (WITHOUT steam bake)

A colleague from another department ordered this. Thanks Mr Goh!
The struggles i have in making chiffons due to the naughty oven. haha. Hubby told me this pandan chiffon looks fine, yes it is definitely ok with right texture. Personally i prefer naked looking chiffon. I must admit, chiffons really require tender loving care. Due to the nature of the cake, it is considered an above intermediate level of baking comparing to bread loaf. =)

Anyhow, i really appreciate family and friends who supported my mini bakery. #mrstanthebakingmama started in December 2015, specially for my late dad who passed away on 30 March 2016. Of cuz, it was also my passion in baking, and now cooking. (perhaps i have a little of my parents and grandparents who cook well) ps. i have a chef grand-dad oh. hehe

Mango Sticky Rice

My first attempt on Mango Sticky Rice =)
Success!


Mango sticky rice
Servings: 4

Time: 1 hr
Skill: Intermediate

Ingredients:
2 mangoes
250g glutinous rice
2 strips pandan leaves (cut into 4cm)
200ml coconut milk
50g sugar
¼ tsp salt
20g white sesame (toasted)

Coconut Cream:
150ml coconut milk
1 tbsp sugar
⅛ tsp salt
¾ tsp tapioca starch

Steps:

Wash and rinse 250g glutinous rice until the water is clear. Soak the glutinous rice in water for 6 hours or overnight.

Drain the water.

Steam the glutinous rice over a muslin cloth for 15 to 20 minutes until it’s cooked.

While the glutinous rice is steaming, prepare the coconut cream and sugar mixture.

In a pot add in 200ml coconut milk, ¼ tsp salt, 50g sugar and bring it to a gentle simmer.

Gently stirring until all the sugar has dissolved. DO NOT LET IT BOIL.

When glutinous rice is cooked, remove pandan leaves and transfer rice to mixing bowl

In a cutting and gentle turning motion, slowly drizzle in the coconut mixture in.

The glutinous rice will absorb all liquid, resulting in a glistening pearly rice sheen.

Dry toast 20g sesame seed until . Set aside to cool.

Pour 150ml coconut cream into a sauce pot. Stir in 1 tbsp sugar, ¼ tsp salt and ¾ tsp tapioca starch. Bring to a scalding point. Stir gently until sugar dissolves and coconut mixture thickens.

Serve glutinous rice with sliced mangoes and drizzle coconut cream on top

Sprinkle toasted sesame seeds on rice

Pandan Bread Loaf

I'm always happy to bake for people when i have time. Please don't get the wrong idea that i am very free ya. I still hold a full time job, teach my kids spelling, chinese spelling, show n tell, prepare meals, house work. Full time working mum plus full time house wife. How did i do that? i'm amazed too.. LOL. Guess i learnt it from my mum. 

Thanks mummy! Because you taught me breakfast is the most important, now i am making sure Jays eat well. Because you nagged at my writings, now i am doing the same to Jays. haha! Yes, now i know why you kept erasing my chinese words, untidy --> erase! erase until page torn, you mend it. hahaha, i will never forget how you thought me my chinese spelling until 2am in K2. hehe. (but i won't let jays sleep that late la..)

This is very moist, similar to Mrs Ng Butter cake, just additional pandan and coconut and it's more fragrance. Wanted to bring the whole cake over to mum's place, but hubby and i stole 2 pieces to eat.. hehe. cannot resist.

Matcha and Pandan Chiffons

A regular customer's order. 2 Matcha and 4 Pandan Chiffons in 18cm.


We went over for a staycation at Sengkang for prayer to my late dad on sunday morning. Had so much fun!
went to Anchorvale Swimming Complex with cousins

jays did kick scooter too! we had so much fun over the weekend. =)




comes night time while hubby and kids play wii, we went to the nearby 24hrs NTUC to get some ingredients to cook for tomorrow early morning prayer. once in awhile, late night gathering is so relaxing.


after prayer, brought the kids to Coney Island together with my brother and sharon (sil) =)
