Claypot Chicken Rice by Rice Cooker

After trying some sachet claypot rice marinate, i still feel Teo Family's marinate is the best. hehe!
Thanks mum for teaching me how to cook this dish. I shall go get a real claypot and try the next round.

2 Dishes Dinner
no big fish no big meat, simple Emperor Chicken (not even with garnishing - parsley) i feel that there is no need as nobody at home eats that. It will land up in the dustbin anyway. The vegetable is Wang Bok with something like mock abalone (duno what is it also.) Notice my dishes are getting simpler, and mostly on-pot meal?
Because hubby has night lectures 3 times a week, so i have to manage the kids all by on my own from cooking to washing dishes, sometimes laundry (thank goodness we have dryer). Then to kids school work. Everyday is so rush, because i have so little time and kids have to go to bed by 9pm (this is to make sure they have sufficient sleep).
Sometimes when i blog, it's without word because i have no time. I asked myself, is being a SAHM good? So i googled about SAHM vs Working Mum. Judge yourself. Both have its pros and cons. I personally is afraid that one day when i become SAHM, i will be super auntie and gossip all day long. HAHA! #justsorandom

Rice Cooker - Claypot Chicken Rice
Refer to the previous post for recipe. But this round i used chicken stock plus dark sauce and seasoning from the chicken wings for the rice. I like today's claypot rice. hehe
Most of you know i like to multitask, be it at work or at home.
Recipe for 5~6pax
1. 10-12 Chicken Wings (marinated overnight with oyster sauce, sesame oil, hua tiao jiu and a bit of water, dark sauce and corn starch)
2. sliced shitake mushrooms (about 5 caps, depending on the size)
3. 10~12 short taiwan sausage
Method:
1. Wash 2 cups of rice, drain it. Add 2 cups of chicken stock (minus a bit) allowance to top with chicken marinate sauce and dark sauce).
2. Bake the chicken wings and taiwan sausage in preheated ove 180 deg C for 25mins.
3. Stir fry sliced shitake with minced garlic.
4. Check rice in rice cooker, when the rice is almost done, stir it well and mix in all the ingredients.

Simple Dinner
Over the weekends we had our dinner as early as 5.30pm. We realised we had more family time bonding. Sometimes i really wish i am not working. At least i can spend more time with my kids. Oh well, be contented with what i have now. =)

Basically it's just rice with baked chicken wings, broccoli, carrot, sweet corn and poached egg. Simple, easy and healthy meal =)

Bagel with Avocado and Shredded Chicken Breast
Bagel was from Cedele.
Spread with Laughing Cow light cheese.
Homemade Avocado with shredded chicken breast and an hard boiled egg.

Nasi Lemak
Tada~ my first time making Nasi Lemak for dinner.
forgotten where i got this recipe from, but the measurement is 2 cups of rice + 200ml coconut milk + 300ml water.

Dinner
I guess i couldn't make sure meal in a short time with all those machines. Song Cho soup maker to make creamy mushroom soup, using my oven to bake CP Nuggets. Rice Cooker to cook "claypot chicken rice", and the pasta from another pot.. hahaha!
It's such a joy seeing Jays gobbling up the food. Total LOVE.

One Pot Chicken Macaroni
The original recipe was from Diana Gale.
I was afraid my kids doesn't take grainy mustard, hence the recipe was improvised slightly. Here's my first attempt. This round i added macaroni =)

EMPEROR HERBAL CHICKEN 药材皇帝鸡
Dinner was EMPEROR HERBAL CHICKEN 药材皇帝鸡.
Ingredients:
4 Chicken Thigh
4 Red Dates
Handful of Goji
Steps:
1. wash chicken
2. marinate with the spice
3. throw in dates and goji
4. add a bowl of water (estimation)
5. i like it very soft, steam for 90mins

Lor Mai Gai
Recipe from Lucinda.
Loh mai kai ( 5 servings )
Ingredients:
300 gms glutinous rice, soak for 1 hour and drained
300gms boneless chicken, cut to bite sized pieces
5 dried mushrooms, soaked till soft
1 Chinese sausage, sliced
Marinade for chicken and mushrooms:
2 tbsp soy sauce
1/2 tbsp dark soya sauce
1 tsp sesame oil
1 tsp sugar
1/4 tsp salt
1/4 tsp pepper
1 tbsp ginger juice
1 tbsp cornflour + 2 tbsp water
Marinade for rice:
2 tsp oyster sauce
1tsp dark soya sauce
1 tsp sesame oil
1tsp sugar
1 tsp pepper
1 tsp salt
Method:
Marinade chicken and leave aside for 1 hour.
Add marinade for rice and add enough water to cover rice and steam for 15 - 20 mins.
Heat up 1 tbsp oil in wok and fry 1 tsp mince garlic till brown.
Add in marinated chicken, mushrooms and fry till chicken turns white.
If mixture is dry, pour in 50ml of water and mix well and let mixture comes to a boil.
Leave mixture to cool.
Place chicken, mushroom and sliced sausage at bottom of aluminum bowl.
Top with steam glutinous rice.
Flatten mixture with a spoon and cover with a piece of aluminum foil.
Steam over high heat for 20 mins.
Invert on a plate to serve. Garnish with spring onions and coriander.
