(Mee Tai Bak) Rice Pin Noodles Fish Ball Soup


Ingredients:
2 litre water
2 cubes of Knorr Chicken cubes
1 long fish cake
1 pack of fish ball (those with water) - somehow taste better
some lettuce
Pork Lard and oil for fragrance
400g to 600g Mee Tai Bak

Dip:
Chilli Padi
Light Soy Sauce

Bak Kut Teh Macaroni

My body decided to surrender to fever.
I was shivering with no fan and under blanket, that feeling was terrible. Felt so weak that i made the kids sleep at 8pm. Totally no strength at all. I couldn't even go through spelling with Jays.

2 Dishes Dinner


no big fish no big meat, simple Emperor Chicken (not even with garnishing - parsley) i feel that there is no need as nobody at home eats that. It will land up in the dustbin anyway. The vegetable is Wang Bok with something like mock abalone (duno what is it also.) Notice my dishes are getting simpler, and mostly on-pot meal? 

Because hubby has night lectures 3 times a week, so i have to manage the kids all by on my own from cooking to washing dishes, sometimes laundry (thank goodness we have dryer). Then to kids school work. Everyday is so rush, because i have so little time and kids have to go to bed by 9pm (this is to make sure they have sufficient sleep).


Sometimes when i blog, it's without word because i have no time. I asked myself, is being a SAHM good? So i googled about SAHM vs Working Mum. Judge yourself. Both have its pros and cons. I personally is afraid that one day when i become SAHM, i will be super auntie and gossip all day long. HAHA! #justsorandom

Minced Pork Mee Sua




Serves 4-5pax
Ingredients:
200g Minced Pork
1 packet Mee Sua
Eggs
Lettuce
Ginger

Method:
Marinate minced pork overnight with oyster sauce, sesame oil, hua tiao jiu and corn starch.
(my mum said some corn starch makes the pork smoother)
all based on estimation
1. heat ginger and sesame oil
2. add water
3. add minced pork 
4. add lettuce
5. add mee sua
6. add additional oyster sauce, sesame and hua tiao jiu according to taste.

Sliced Batang Fish, Thick Bee Hoon Soup


This round i cooked without measurement. Bought Batang from the wet market, asked uncle to slice it for me. Hmm below are the ingredients needed. A very cheap and simple one pot meal that can feed up to 6 pax. 



600g Thick Bee Hoon appx $1
Batang $10
Xiao Bai Chye handful $0.40
Tomatoes 
Ginger $0.30
Minced garlic 
Some butter
1.2 Litre Chicken Stock
Fish Sauce
Hua Tiao wine

Wat Tan Hor Fun

Rice Cooker - Claypot Chicken Rice


Refer to the previous post for recipe. But this round i used chicken stock plus dark sauce and seasoning from the chicken wings for the rice. I like today's claypot rice. hehe

Most of you know i like to multitask, be it at work or at home.

Recipe for 5~6pax
1. 10-12 Chicken Wings (marinated overnight with oyster sauce, sesame oil, hua tiao jiu and a bit of water, dark sauce and corn starch)
2. sliced shitake mushrooms (about 5 caps, depending on the size)
3. 10~12 short taiwan sausage

Method:
1. Wash 2 cups of rice, drain it. Add 2 cups of chicken stock (minus a bit) allowance to top with chicken marinate sauce and dark sauce).
2. Bake the chicken wings and taiwan sausage in preheated ove 180 deg C for 25mins.
3. Stir fry sliced shitake with minced garlic.
4. Check rice in rice cooker, when the rice is almost done, stir it well and mix in all the ingredients.

Simple Breakfast


Today is #GNP1986 's 14th dating anniversary. 

A very simple breakfast prepared by myself: scrambled egg (i really did not measure how many eggs to how much milk to add) somehow, today's scrambled was perfect!
