Sliced Fish Congee
Cooking congee without hassle in future!
Recipe from MrsTantheBakingMaMa
for 4 pax
Approximately 20 slices ‘Sheng Yu’ (生鱼)
1 tbsp soy sauce1 tsp corn starch
(set aside)
Using Song Cho Soup Maker
1 cup rice (washed and drained)
Add chicken stock to 1300ml marking in the machine
Menu set to PORRIDGE, press START (around 55mins)
Once done, pour out in pot and bring to boil.
Add in marinated sliced fish and briefly stir until fully cook.
Serve with:
Green onions finely chopped
Fresh ginger julienned
Soy Sauce
Sesame oil
Fresh cilantro leaves (opt)
White pepper powder

Simple Dinner
School reopens today!No change to me as i am working everyday. Back to rushing for time, the routine will continue. Work, Cook, school work, prepare dish for dinner and go on until weekend. I haven't caught up with my beauty sleep. Have been feeling so tired in office.

Butter Cake
Had to clear a few blocks of my Lurpak (slightly salted).
170 Deg C - 45mins
150 Deg C - 20mins
140 Deg C - 10mins
Thankfully the taste did not compromise.
Recipe by Mrs Ng SK, found in Domestic Goddess Wannabe.
Ingredients
- 230g Salted Butter, room temperature
- 4 egg yolks
- 150g caster sugar
- 200g self-raising flour, sifted
- 60ml fresh milk
- 1 teaspoon vanilla extract
- 4 egg whites
- 50g caster sugar
Instructions
- In the bowl of a mixer, cream the butter and sugar (150g) until it turns light and fluffy. Scrape the sides of the bowl occasionally. Be patient and let the machine do its work!
- Add the egg yolks, one a time and beat it in before adding the next.
- Beat in the vanilla extract. Fold in half the flour.
- Add the milk and mix. Add the remaining flour and fold until just incorporated.
- Scrape the bowl and give the batter one final mix. Set this aside.
- In a clean mixing bowl, whisk the egg whites until it turns foamy. Slowly and gradually, add the sugar (50g), whisking all the while. Whisk this until stiff peaks form.
- Transfer 1/3 of the egg whites into the egg yolk batter. Beat this in.
- Gently fold the remaining egg whites in 2 batches until all the egg whites have been incorporated.
- Pour this into a lined and greased 8×8-inch baking pan.
- Bake at 170°C for 45 minutes.
- When the cake is done (insert a skewer it the cake and if it emerges cleanly it is done), let the cake rest for 5 minutes in the pan before carefully transferring onto a wire rack to cool completely.
- Cut into slices and enjoy!!
Notes
- As I noticed that the top of the cake was getting quite brown, I reduced the heat to 150°C at the final 20 minutes, then to 140°C at the final 5 minutes. You need to keep an eye on the cake and to know how your oven behaves so you can make the necessary adjustments.

Hong Kong Style Maggie
Last weekend didn't have time to go marketing, so there isn't any vegetable. *oops*
This week i'm cooking based on what i can find in my fridge. Today's menu is Hong Kong Style maggie mee soup.
I used the above Nissin Sesame Oil maggie.
Added this sausage and an egg =)

June Holiday: Mr Men, Little Miss and Terrarium Workshop
Our simple Sunday morning breakfast: Cream of Chicken Soup with Garlic Bread.
Head over to Hillion Mall for Mr Men and Little Miss event.
We were so lucky to get the photo pass. =)
Spent $20 in the mall and you get to do crafts. There were sand art and badge making.
Do take note for badge making, you have to draw your own Mr Men / Little Miss character.
Jaymie did her first closed terrarium with fittonia plants and mose inside.
This was holiday workshop for age 7 and above. More information here.
(only one free figurine was given) what you see here with additional rabbit and two fences, were topped up.
So proud of her work.
